Detailed Product Description:

Sodium nitrate is a salt, also known as saltpeter.  It is a colorless,

odorless, crystalline powder.  It is saline with a slightly bitter taste.

Soluble in water and glycerol, slightly soluble in alcohol. 

Applications:

Traditionally used in glass and pottery enamels, and as an oxidizer in

specialty fertilizers, pyrotechnics, explosives, and in solid rocket

propellants.  It is also used as a preservative in curing of foods.

Sodium Nitrate can also be used as a nitric acid substitute in the

formulation of aqua regia for dissolving gold.

Background:

Sodium nitrate was used extensively as a fertilizer and a raw material

for the manufacture of gunpowder in the late nineteenth century.  It has

antimicrobial properties when used as a food preservative.  It is found

naturally in leafy green vegetables.  Though traditionally mined in Chile

as the mineral “caliche”, sodium nitrate is also synthesized industrially

by neutralizing nitric acid with soda ash.

Sodium nitrate should not be confused with the related compound, sodium

nitrite, whose presence of in food is controversial due to the development

of nitrosamines when the food, primarily bacon, is cooked at high temperatures.
